Antico Casale and Slow Food
The "Cuochi dell'Alleanza" Project
The Antico Casale in Colli di San Pietro and the Slow Food movement came together in December of 2013, and since then our farm and restaurant have actively supported of this important initiative. We are vocal participants in the Sorrentine Peninsula and Capri chapter, and espouse a "slow" philosophy both in our agriculture and cuisine, including with campaigns like “Mercati della Terra” and “Cuochi dell’Alleanza”.
Our goal is to guarantee authentic local products grown with respect to tradition and in balance with the ecosystem. We participate in “Cuochi dell’Alleanza”, a group of chefs who are the first line of defense for the biodiversity of food around the world, dedicated to using ingredients sourced by small, local farmers who acknowledge the importance of biodiversity in their kitchens. We use products from local consortia, the Arca del Gusto, and small farmers and producers, and are sure to note the origin of our ingredients on our menus to support and recognize their important work. We try to highlight these ingredients from our local area by respecting the seasons and the traditions of our land, while serving them with a modern twist!
Cooking Classes
If you would like to learn the secrets to preparing traditional recipes from Sorrento, then join one of our cooking classes held at Nonna Luisa.
Your cooking class begins...in the vegetable garden! Here, you will pick the all the produce you need while Mario and Salvatore explain which are the traditional plants grown in this area and how they are cultivated. Once you have completed your "shopping" in the garden, you will move to the kitchen and prepare a meal with a starter course, a pasta course, and a main course.
After your class, everyone will gather around the table to sample the fruits of your labours alongside other traditional local products from our family farm. For those who are not our guests at the farm, there is a shuttle service to and from Sorrento and Positano.
